Iraqi Durum Wheat is a landrace variety from Iraq that is grown in California. It is a relatively hard wheat with a high protein content that is delicious when cooked up as a whole grain and the whole wheat flour makes an ideal dough for rolling out in to your fresh homemade pastas. Iraqi Durum flour is also just what you need for those rustic durum breads popular in Southern Italy. This variety is also particularly exciting because it grows well in the Sacramento Valley and has become a key variety in the burgeoning small-scale, local grain movement.

This grain has a lovely sweet, malty flavor and high protein content. Great for homemade pasta, pancakes, sourdough & crackers!
