This ranch presents a family tradition that stretches three generations back in both Achadinha, Portugal and Vallejo, California when both of Jim’s – the family patriarch – grandfathers were milking cows. Eventually the family relocated to Petaluma where they are currently milking cows and goats to bring us these beautiful Farmstead cheeses direct from the ranch.
Feta cheese is a soft, crumbly brined cheese that originated from Greece and is incorporated into almost all Greek dishes. Feta is creamy white in color with small holes and a crumbly texture. It normally comes in square cakes with no rind. It’s generally brine-cured for four to six weeks and because of this it has higher sodium content, and therefore should not be consumed on a low sodium diet. Its flavor is salty and tangy.

USES
Feta is great in salads and most Greek (and other Mediterranean) food. It’s delicious when it’s cooked, melted or heated up. We also enjoy it on its own and as part of a cheese or charcuterie board. Here are some more ways to eat feta – possibilities are endless!
